That comfort food feel, with just a little bit of "oomph" to keep things exciting!
INGREDIENTS
1 bu cilantro, coarsely chopped
1 bu scallion, sliced thin
1 bu parsley, coarsely chopped
½ bu mint, coarsely chopped
4 cloves garlic
1 tsp cumin
2 c cooked millet
1 c cooked quinoa
¼ c ground flax seed
3 yellow onions, sliced thin
3 tbs olive oil
¼ c vegan mayo
1 tbs gochugaru
2 tsp rice vinegar
INSTRUCTIONS
Sautée herbs, garlic & cumin until garlic is translucent and herbs are wilted.
Allow to cool, then transfer to a large bowl with millet, quinoa, & flax seed. Add salt to taste.
In the same saucepan, heat oil & add onions + salt. Sear on medium-high heat for 3-5 minutes, then turn heat to low cooking another 10-15 minutes until caramelized.
Form the millet mixture into 1-inch round balls, and place on a sheet pan. Spray with olive oil and bake at 500 for 10-15 minutes until crisp on the outside.
Top your fritters with the caramelized onions and enjoy!
