Meatless Monday Recipe: Herbed Fritters & Caramelized Onions

That comfort food feel, with just a little bit of "oomph" to keep things exciting!



Herbed fritters with caramelized onions in a small crock bowl


INGREDIENTS

  • 1 bu cilantro, coarsely chopped

  • 1 bu scallion, sliced thin

  • 1 bu parsley, coarsely chopped

  • ½ bu mint, coarsely chopped

  • 4 cloves garlic

  • 1 tsp cumin


  • 2 c cooked millet

  • 1 c cooked quinoa

  • ¼ c ground flax seed

  • 3 yellow onions, sliced thin

  • 3 tbs olive oil

  • ¼ c vegan mayo

  • 1 tbs gochugaru

  • 2 tsp rice vinegar


INSTRUCTIONS

  1. Sautée herbs, garlic & cumin until garlic is translucent and herbs are wilted.

  2. Allow to cool, then transfer to a large bowl with millet, quinoa, & flax seed. Add salt to taste.

  3. In the same saucepan, heat oil & add onions + salt. Sear on medium-high heat for 3-5 minutes, then turn heat to low cooking another 10-15 minutes until caramelized.

  4. Form the millet mixture into 1-inch round balls, and place on a sheet pan. Spray with olive oil and bake at 500 for 10-15 minutes until crisp on the outside.

  5. Top your fritters with the caramelized onions and enjoy!
