We're presenting our take on paté - without the meat. Bon appetit!
INGREDIENTS
1 ½ c sunflower seeds, soaked
2 ¼ c walnuts, soaked
1 c cooked lentils
1 clove garlic
1 tbsp shallot, diced
1⁄2 c fresh dill, minced
1 lemon, juiced
1 tbsp tamari
Sea salt, to taste
Toasted bread, cut into bite-sized slices
1/2 cucumber, sliced
INSTRUCTIONS
1. Soak walnuts & seeds overnight OR for half an hour in warm water.
2. Pulse all ingredients except cucumber & bread in a food processor until a spreadable mixture forms.
3. Spread paté on toasted bread, top with cucumber slice & fresh sprig of dill if desired.
